I couldn’t think of a better name than that. ūüėÄ ūüôąI’ve been making it every couple of weeks for months at the request of my little family. I have no idea where the inspiration came from, it just did. Since several people asked for the recipe, I finally measured everything out today. Since I didn’t have much time to cook, I made our lunch today in the pressure cooker. ūüėä For those who don’t have such a machine, you can cook it on the stove in a wok in the same way, but of course it takes longer to cook. The soy sauce must be gluten free!!!

Ingredients for 3 people

3 whole chicken breasts
1 tablespoon of lactose-free liquid butter
3 tbsp slightly hot gluten-free sambal
3 heaped tablespoons brown sugar
3 tablespoons gluten free soy sauce!!! you have to be very careful to make it gluten free!!!
3 tablespoons of gluten free ketchup
1 teaspoon of garlic powder
pepper to taste
salt to taste

Preparation

I have an Aigostar pressure cooker, but I’ve seen it under other names. It’s a great little appliance and often when I’m short of time, I just put it into work, like now. It makes very tasty meals in a short time. I have now set it to cook for the first time, as if I was using a hob. I put butter in the bottom of the pan and cooked both sides of the chicken breasts until red.

When the meat was nice and red, I put the sugar in the machine first and then the other ingredients. I pulled one of the meats aside to mix it all thoroughly and get a thick sauce. I also cooked both sides in the sauce for 1-1 minute.

I closed it, set it on the meat program, 15 minutes, as you can see. Since I had already cooked the chicken breasts in the machine, it reached the cooking temperature quickly, and was done in about 20 minutes total (pre-heating included).

Meanwhile, the potatoes were cooking in the airfryer. That way I could serve the delicious, flavorful, crumbly meat to my family 30 minutes later, doing other things while it was cooking. ūüėä I served the meal with a hot, rich sauce. ūüėč Sometimes I take the meat apart and put it with some sauce in a giant hot gluten-free bun. Try it, it’s delicious that way too. ūüėč

I was able to buy a nice thinly sliced turkey breast. I’ve never thought of stuffing it like that before, but it turned out to be delicious, and I’ll make it again. ūüėäūüėč With Christmas coming up, I would recommend it to anyone. It takes only a few minutes to prepare the stuffing and fill the meat. And after roasting, you just need to steam them and you don’t need to stand by the hob. But you can also prepare the meat the day before and just roast it on Christmas Day. ūüėäūüéĄūüéá‚ú®

Ingredients for 4 people:

4 thin slices of turkey breast
8 slices of lactose-free cheese
16 thin slices of gluten and lactose free bacon
8 slices of gluten and lactose free turkey breast ham
100 ml lactose-free milk
For filling:
1 gluten-free bun
1 bunch of green parsley
1 egg
50 g gluten- and lactose-free liver pate
ground pepper to taste
garlic powder to taste

Preparation

I cut the buns into small pieces, arranged them in the bottom of a small bowl, then poured the milk over them. I pressed them thoroughly into the milk and leaved them for a few minutes to soften all over. I didn’t need to pour the milk off because it was all absorbed by the bun, but if there’s any left in the bottom of the bowl you have to pour it out. Then I mixed it thoroughly with the ingredients.

I salted the turkey breast slices and layered them with ham, cheese, stuffing, then cheese and ham again. I carefully folded in the ends of the meat and then the sides on top.

I sealed the ends with the bacon first and then covered the stuffed meat tightly from the other side.

I browned both sides in hot oil, then lowered the heat to simmer under the lid for 15-20 minutes until tender.

I served it with parsley rice, but any side dish will do. When you cut the meat apart you can see the layers very nicely, the filling in the middle stays intact, the hot melting cheese permeates all the layers. ūüėč

There is not always time to cook or spend a lot of time in the kitchen. It’s good to have a recipe that you can prepare in advance and store in the fridge to bake the next day. This dish took me 15 minutes to put together, and then I could do my business while it was baking.

Ingredients:

rice for 4 persons
1 small purple onion
1 small Chinese kale
400 g minced meat
salt to taste
pepper to taste
garlic powder to taste
lactose-free sour yoghurt or sour cream to taste

Preparation

To start, you need three pots. In the first one, put the rice to cook.

In the second, sauté the purple onion in butter until translucent.

In the third, put water to boil with a teaspoon of salt.

I cut off the end of the kale and separated the leaves.

After the onion was cooked, I mixed the minced meat with the herbs and cooked it until the meat was white.

No need to cook the rice and the meat fully, because they will still be roasting in the oven.

When the water has boiled, I cooked the cabbage leaves for 2-3 minutes, making sure that the thick white part is under the water.

I coated a fireproof dish with olive oil.

I used the cabbage leaves to line the bottom of the baking dish so that it overhangs the edge of the dish (you’ll need to fold this back over the minced meat at the end).

I spread the rice evenly on top, then came the minced meat.

I folded the rest of the cabbage over the minced meat. I spread the top generously with sour cream. I baked it in a preheated oven at 210 degrees for 30 minutes, at the end I baked it on a higher heat for 5 minutes to brown the sour cream and the cabbage on top.

It’s best when hot, when you take it out of the oven.ūüėč But then it’s hard to serve it nicely, because it tends to fall apart when you put it on the plate. If possible, wait 15 minutes before cutting it. You can also serve it with lactose-free sour yoghurt or sour cream on the plate.

The plants in our green house were drying out, so we took them out. As last, farewell autumn presents from our plants, we found cucumbers, several types of peppers and 4 giant bell peppers (which we call American peppers over here). I knew then that they would become stuffed peppers. I didn’t have much time in the kitchen today, but the preparation was done in half an hour, then they just needed roasting. You can prepare this meal in advance, and when you want to eat it you just have to roast it in the oven. Of course, you may need longer roasting time if you take out from the fridge. The ingredients are marked gluten free, which is why I included them in the recipe.

Ingredients for 4 people

150 grams onion
4 large bell peppers
2 large garlic cloves
600 grams minced chicken breast
2 tablespoons of paprika cream
1 teaspoon of ground pepper
1 teaspoon of salt
tomatoes to taste
lactose-free or vegetable cheese to taste
To serve:
boiled potatoes
lactose-free sour yoghurt or lactose-free sour cream to taste

Preparation

I fried the onions in a little oil. I washed the peppers and peeled the garlic.

I sautéed the thinly sliced garlic with the onion for a few minutes, then added the minced meat. I cooked it until the meat was white and then added the spices. I cooked it for a few minutes more. Meanwhile, I cut off the ends of the peppers and scooped out the insides.

I was looking for a baking dish in which the peppers wouldn’t fall over. I drizzled olive oil all over the tray, as well as the outside of the peppers, to make them roast better. I stuffed them with the meat filling. At the end, I poured the juices from the roasted meat into the peppers. I sliced some tomatoes, I had some cocktail tomatoes at home this time, put them on top of the meat and sprinkled the top with cheese. I preheated the oven to 180 degrees and cooked the dish for 30 minutes.

While it was roasting, I peeled potatoes, cut them into large slices and boiled them. We tasted it when serving and found that it went well with sour cream. When we cut the peppers in half, the juices from the roast flowed out, and it was delicious with the potatoes.

Stuffed peppers are an indispensable part of Hungarian cuisine. Many of us would like to believe that we have been preparing it for hundreds of years, depending on the region, and putting it on the table for the family’s enjoyment. We are wrong: this Hungarian dish, which is considered traditional, is of Serbian/Aryan origin according to legend, but they are said to have learned it from the Turks. The dish known as stuffed peppers or tomato meatballs, which is barely 100 years old, is the result of their wild marriage.
And of course it is a favorite of our family, especially my husband’s. ūüíē
I indicated that it’s gluten-free because it needs flour and the ingredients have to be very selective to make sure everything is gluten-free (bouillon cubes, tomato puree).

Ingredients for 4 people

200 g rice

For tomato sauce:
400 g concentrated tomatoes
olive oil
4 tablespoons gluten-free flour
50 grams chopped leeks
1 teaspoon salt
1 liter of power soup

For stuffed peppers:
300 g minced meat
4 larger peppers
olive oil
50 g chopped leeks
2 cloves of garlic
1 teaspoon salt
black pepper
2 eggs

Preparation

I prepared the rice first, I cooked it halfway and then rinsed it.

Since I didn’t have broth, I had to make it at the beginning, because I was going to add more of it during cooking.

I heated the oil and fried the flour in it. I added half the power soup, cooked it for a few minutes, then came the tomato puree, leeks and salt. I lowered the heat and cooked for 30 minutes.

Meanwhile I prepared the peppers. I washed them, cut off the stems and cut out the center.

I took a pan that was just a bit bigger than needed for the peppers, to have some space for any left-over stuffing.¬† It’s important that the pan isn’t much bigger, otherwise the sauce won’t cover the peppers when cooking.

I lightly fried the leeks for the stuffed peppers in olive oil. I put it on the cooled rice with the other ingredients. I mixed it thoroughly. The original recipe has pork in it, but we are allergic to it, so I made it with chicken breast, which is why the meat doesn’t show up as much in the rice.

I stuffed the peppers. It’s important to fill the peppers all the way through, because if you leave the end empty, it’s not pretty when you serve it, it will collapse. You shouldn’t overfill either, because the half-cooked rice will swell and that will cause the pepper to crack. I left out some filling, formed them into dumplings and put them between the peppers.
In the meantime, I made the tomato sauce and poured it on top. If it’s too thick, you’ll need to dilute it with some more power soup. After boiling, I put a lid on it and reduced the temperature so it was just slightly boiling. You have to be careful not to burn it, but don’t stir it, otherwise the stuffed peppers will fall apart. You can loosen them by joggling the pan while they cook. Occasionally top up the sauce by adding more left-over power soup, so the tomato sauce always covers the stuffed peppers and dumplings.

There are regions where they do not serve any side-dish. Some serve it with freshly baked bread. In my country, I was taught, boiled potatoes must be prepared as a side dish, and the potatoes are cut into strict lengths. ūüėÄ

After 30-40 minutes, the stuffed peppers were ready. I served them with lots of sauce and potatoes. Some people eat the peppers, others just the stuffing. My kitchen was filled with an old, familiar smell, like in the old days in the village when my grandmother used to make them. ūüíó

The family has always loved pizza. When I first found out I had celiac disease, I thought about how many delicious things we would have to give up. Then and there, 3 years ago, I also bewailed the pizza, one of the family favourites. Of course, in time I found out that this was not the case at all. ūüėä I’ll never forget the joy of the first time I put it on the table gluten and lactose free. Having four children, there was never silence at family meals, although we never tried to be silent. But it was a good sign when I put something on the table and after a few minutes there was only silence.
These times I would say:
“Sooo?”
The answer was, “Mum, can’t you see? We are eating! It’s delicious! ūüėć Even gluten free.” ūüėä

Ingredients for four persons

For the dough:
5.5 dl water
500 g gluten-free all-purpose or bread flour
50 grams of yeast or a packet of powdered yeast
1 tsp salt
1 teaspoon of sugar
2 tbsp olive oil

For pizza sauce:
5 cm leeks
100 ml concentrated tomatoes or ketchup
1 teaspoon of pepper
1 teaspoon marjoram
2 cloves of garlic

For the topping:
2 dl lactose-free sour cream or yoghurt
2 medium garlic cloves or 1 teaspoon garlic powder

ham to taste
sausage to taste
bacon to taste
200 grams grated cheese

Preparation

I put the ingredients in a blender and thoroughly kneaded them.

I coated the bottom of the pizza pans with oil, took the dough in four portions and flattened them with oiled hands on the bottom of the pizza pans. I set the oven to dogh-rise, for those who don’t have this program set the oven to 30-40 C, put warm water in the bottom of the oven and put the doughs to rise for 20 minutes.

Meanwhile I made the pizza sauce, I put a teaspoon of salt on the garlic. I cut the leeks into very thin slices and fried them in a little oil. I added half of the tomato sauce and stir-fried it all together, and mixed in the other half of the salted garlic.

I added the garlic tomato juice, spices and chopped tomatoes to the boiling sauce. My tomato puree was quite thick, so I added a little water to cook the tomato chunks. It is ready when it thickens nicely and the tomato pieces are no longer quite visible.

Half of our family is intolerant to tomatoes so I made pizzas with yoghurt topping for those who can’t eat tomato. I mixed sour cream with garlic powder. I chopped it up, prepared the ones I’d like to top the pizzas with.

After 20 minutes I took the dough out of the oven, it was starting to rise nicely.

I used three different flavours on one pizza. I slathered the pizza sauce first, then the toppings, then I sprinkledput grated cheese on the top.

I made the other kind of pizza in a similar way, I spread the sour cream sauce and added all sorts of goodies.

I put it back in the oven to rise for another 20 minutes.

After the time was up, I set the oven to 200 degrees and baked the pizzas for 20 minutes. The one at the top was nicely browned by this time, I took that one out. I set the oven to toast (if you don’t have this program, set it to a much higher temperature) and the next pizza was baked in 3-4 minutes. I put the bottom two pizzas higher up on the pan holder, and toasted them, taking into account who prefers it toasted or less crispy.

I don’t make it very often, although my husband loves it. He has a sweet tooth, so anything made with sugar is good. ūüėč Luckily it’s easy to make it gluten and lactose free. In Hungary it’s served as a main dish, here in Belgium it’s more like a cake stuffed in buttered pastry.

Ingredients for 4 portions

250 g rice
1 liter lactose-free milk
sugar to taste for the rice
1 packet vanilla sugar
4 eggs
50 g gluten and lactose free pudding powder
sugar to taste for the pudding
1 liter milk
butter to grease the baking dish
2 tablespoons gluten-free breadcrumbs
apricot jam

Preparation

I cooked the rice in the milk with, adding the sugar and the vanilla sugar. When it was ready, I took it off the heat and let it cool for at least half an hour.

I added the yolks of the eggs to the rice and mixed it well. Then I whisked the whites until stiff.

I greased a fireproof dish with butter and sprinkled with the breadcrumbs.

I mixed the whisked egg whites with the rice with quick but light movements, then I put it into the baking dish. I baked it in the oven at 200 ¬įC for 30 minutes.

While it was baking, I made the vanilla sauce. The important thing is to mix the pudding powder with more milk than prescribed, so it will be thinner and will flow better than the usual pudding.

I took the baked rice pudding pie out of the oven and let it cool for a few minutes, because it’s easier to slice when cooled down a bit.

You can make it in advance and just bake it in the oven later. It goes with any side dish, this time I served it with rice. Gluten and lactose free because I used my béchamel sauce recipe.

3 chicken breasts
400 grams cauliflower
2 portions of my béchamel sauce
salt to taste

Preparation

I cut the excess off the cauliflower and washed it. I salted and peppered the chicken breasts.

I remembered that when I started to share my recipes, one of my daughters asked me to write it like I was teaching them how to cook. Then, over time, it turned out that their Spanish, Italian and Belgian friends were visiting the website for my recipes, especially for the gluten-free and lactose-free ones. Behold automatic translation. ūüėĀ I‚Äôm not a chef, just a mom, so don‚Äôt expect extraordinary things from me. But you can expect tricks you can use when cooking. ūüėä This recipe is not only for experienced ones.

Ingredients for 4 servings

8 boneless chicken legs
3 cloves of garlic
salt according to your taste
pepper according to your taste
marjoram according to your taste
vegetables according to your taste, this time I used mushrooms
1 tbsp rice flour
2 tbsp lactose-free sour cream or yoghurt
50ml cooking cream or vegetable cream
some cooking oil

Preparation

1. The first important thing they asked me was how can I roast the meat to golden-brown while it’s crumbly inside. The trick is that you must heat up the cooking oil. It must be hot, not only warm. This time I used cooking butter, and you can see in the picture how it’s boiling because it’s very hot. That’s what I put the chicken meat in. Then I salted and I peppered it.

2. It took only a few minutes, then I turned it. I also salted and peppered this side (I always use freshly ground pepper, because it’s more tasty) then I sprinkled marjoram on the top. After a few minutes, I checked if the other side cooked to golden-brown as well. Then I lowered the temperature, but only so much that it was still baking. I poured about 100ml of water under it. I chopped the garlic into small pieces and I added it. It simmered under a lid for 40 minutes.

3. In the meantime, I cooked the rice, but you can make any other side-dish. You can find the rice in my recipes. After half an hour, I put the mushroom next to it, you can use any other vegetable. After 40 minutes, I took out the finished chicken. I mixed rice flour in the still moderately cooking liquid, added the sour cream and the cooking cream. I boiled it and it’s done.

4. When served, the golden-brown-cooked meat looks very nice, and it’s a surprise that it’s crumbly inside, not dry. If you make it the other way around and you steam the spicy meat first, it is very difficult to cook the meat to the right color at the end because it can quickly become over-cooked.
